    CASTELLI FORNI: SINCE 1966

Founded in 1966 in Rome, Italy; Castelli Forni is operated and owned by brothers Elio & Emilio Castelli. The company is focused on the production and development of artisanal electric pizza ovens for the Roman pizza industry.

After forging a partnership with the Associazione Pizzerie Italiane in the late ’80s, Castelli Forni began development of its ovens for baking high-hydration pizza dough. At the time, typical electric pizza ovens in Italy were designed to bake 50-60% hydration pizza dough. The additional dough mass and humidity levels would quickly pull the heat from the floor and render the oven temporarily unusable.

With the guidance of Angelo Iezzi, president of the API, Castelli Forni experimented with a number of oven designs throughout the following decade. The result of these efforts became the Taglio oven series and Roma oven series: the Taglio series being the ideal oven for “pizza al taglio” production, and the Roma series providing a modular chamber system which could be customized for “pizza alla pala”, “pizza tonda”, and “pizza al taglio”.

Castelli Forni ovens are now synonymous with pizza in Rome, and have become the oven of choice for almost all of Rome’s most famous pizzerias. One can find Castelli ovens used at the highly regarded Bonci Pizzarium; or the multi-national Roman pizza chain Alice Pizza, with hundreds of locations throughout Europe.

This line of commercial electric pizza ovens is ideal for any kitchen looking to bake authentic Italian pizza. These superior Italian electric ovens provide even consistency and an even bake, creating an unforgettable taste. Equipped with a variety of features and heavy-duty performance, this series offers a range of options from countertop ovens to powerhouse ovens and more. Incorporate these electric brick pizza ovens in your kitchen space and experience the difference for yourself. No wonder these commercial electric pizza ovens are the number one choice for many professionals.

    • Features

Caldo:  The Caldo pizza warmer oven series is designed and manufactured in Rome for the reheating of Roman style “pizza al taglio”. The Caldo series ovens are fully electric-powered and capable of maintaining temperatures in the range of 450ºF to 480ªF during high-production hours. The oven allows production to continue unabated while retaining the crispiness and humidity levels of the “pizza al taglio”, so that the pizza tastes fresh from the oven.

Roma:  Made with the exact same technology and principles of the Taglio series, Castelli Forni has made their oven modular for greater ease of installation and customization. The 4.75” chamber is for traditional “pizza al taglio”, while the 7” chamber is for “pizza tonda”. The Roma series ovens are designed and manufactured in Rome for the baking of Roman style “pizza al taglio”, as well as Roman-style “pizza tonda” i.e. round pizza. The ovens are fully electric-powered and capable of maintaining temperatures in the range of 540 - 575ºF for “pizza al taglio” and 575 - 700ºF for “pizza tonda”. The oven sections are completely modular, which allows for easy installation/shipping.

Taglio:  The Taglio series ovens are designed and manufactured in Rome exclusively for the baking of Roman style “pizza al taglio”. The de facto standard in Rome’s most legendary pizzerias, the Taglio ovens from Castelli Forni are renowned for their extremely even bake and minimal heat loss. These features are essential to the production of “pizza al taglio” due to its high dough hydration rate, often in excess of 85% water. The powerful hand-made nickel-chromium heating elements, careful chamber design and thick insulation all ensure an optimal bake with extremely low maintenance.
